What meats would you say are needed on an "Italian" sandwich?
Lots of places seem to half-ass it with just ham and salami. Here's what I think: ham is filler. You need capicola, soppressata, mortadella, prosciutto, prosciuttini, and Genoa and/or cotto salami. Plus provolone, lettuce, tomato, roasted peppers, oil and vinegar, oregano, and possibly mayo if you want it to mix with the o&v and make a nice creamy dressing.
