The only ones that I've been able to depend on being in every grocery store are the regular, chipotle, and jalapeno. The habanero and buffalo are a little less common, and the garlic and sweet-and-spicy are almost impossible to find.
The garlic one is pretty interesting. It's basically just Tabasco plus garlic, but you'd swear there was a bit more going on - some kind of pleasantly musty taste. It dominates easily so, much like regular Tabasco, it works best either as a mixed-in ingredient or alongside other flavors that can stand up to it. I've used it with lots of cheeses and tomato sauces.
The sweet and spicy one I've seen in a store only once, and I didn't pick it up. I'm told it's best with Asian dishes and should be used more or less like Sriracha. Anyone want to testify?
