Hey /ck/, Im making my first Sriracha sauce and I have a little question. Normally all the recipes are the same;
"Place jalalpeños, garlic, sugar, and salt in bowl of a food processor. Pulse until chilies are very finely chopped. Transfer mixture to a clean jar, cover, and let sit at room temperature.
Check jar each day for fermentation, when little bubbles start forming at bottom of jar, about 3-5 days. Stir contents each day, continuing to let ferment until chilies are no longer rising in volume, an additional 2-3 days.
Transfer chilies to jar of a blender, add in white vinegar, and puree until completely smooth, 1-3 minutes. Transfer to a mesh strainer set atop of a medium saucepan. Strain mixture into saucepan, using a rubber spatula to push trough as much pulp as possible.
Bring mixture to a boil, reduce heat, and simmer until sauce thickens and clings to a spoon, 5 or 10 minutes."
Im already in the fermentation step, but my question is:
If I put the vinegar and then bring the sauce to a boil , i'm not evaporating the vinegar?.

Hey guys... After years of enjoying my food to the fullest, I finally had to face facts - my oral hygiene sucks and I'd been putting it off too long. All my teeth needed to go.
So, over the course of the last couple of months I've been having teeth pulled (as I could afford them) and finally this week I had the last 6 pulled.
Needless to say, my diet has been rather limited, and got more limted with every extraction. And now, with absolutely nothing to chew with I'm left with the most basic of foods.
I've been eating stuff like mashed potatoes, refried beans, applesauce, simple soups (black bean, tomato, chicken broth), Jello, protein shakes, etc. Once this latest round of extractions heal I can move on to stuff like omlettes, cornbread, meatloaf, baked fish, and stuff like that.
Problem is, I'm getting bored eating the same 10 or so things every week. So I'm asking you folks for any suggestions.
It will be about 5-7 more weeks before I'll be able to get my dentures (3-4 more weeks until I can get fitted, then about 2-3 more weeks to get them made and adjusted.) So gimme some ideas I can use.
