So the mother in law is doing a family roast tomorrow and she's bought a 2kg silverside beef joint. Her method of cooking this will be roasting it for about 7 hours before pouring instant gravy over it and cooking it some more. Any advice for removing a small piece to cook for myself?

Which condiments need to be kept in the fridge? Obviously this will devolve instantly into trolling, but I'm seriously interested and hope I can get a few replies before it's cut out of the body. I know Mustard and Ketchup don't need to be, but what about the other things? I would think Mayonnaise needs to be in there, but how can I really know? Every bottle and jar of every sauce says to put it in there when it's open. Even salsas... and with their acid content I wouldn't think that. What's the skinny? Why do Americans have so many names for the same dish? Is there really a difference between a sloppy joe and a manwich? What are the characteristics that differentiate a sub from a grinder, a hoagie, a po'boy or a hero?
