I've been on a mission recently to find the perfect carbonara recipe. It seems every chef does it differently and it's hard to find two recipes that agree. How do you do it /ck/? Do you use whole eggs or just the yolk? Cream or no cream? Regular bacon or smoked? What kind of pasta do you use? What kind of cheese? Do you add anything else like peas, mushrooms, etc. or do you like to keep it simple? Is there an objectively superior method? I should say that I'm not that interested in what anyone thinks is 'authentic' carbonara or not - I'm mainly concerned with the taste.
