I just got done watching "The Ramen Girl" a silly story of an american girl who fails at life living in japan who decides to learn to make ramen by forcing her way into the lives of a ramen shop's owners. Anyhow, one of the points they kept trying to drive home is that there is some magical experience that the cook can create for the customer, to the point of imbueing a certain emotional response. Now, I've seen this kind of thing in other cooking related stuff from japan in the past. I wish to ask you, /ck/ have you ever received emotion in food form from a meal?

I made mulled wine for the first time on XMas and the anticipation was high... I have wanted to try it for a couple years and did a lot of research. Lots of people seem to either hate it or love it, and I have to say I was completely blown away by how awesome it was. I was inspired by several recipes and went with the syrup route in order to conserve the alcohol. I added: 3 bay leaves, 6 bruised cardamom pods, 1 vanilla pod (split in half), 6 cloves, 3 star anise pods, 1 stick of cinnamon, about 12 raspings off of a whole nutmeg, zest of 1 lemon, and juice and zest of 1 orange. I added ~1.5 C white sugar and added wine... should have added just enough to cover the sugar, but I added more than that. I brought it to a simmer and cooked it for a long time until thick. I left it in the pot for a few hours until I was ready to add the wine. I added 2 bottles of a Chilean red wine that I can't remember right now and heated until it was sufficiently hot. I will do it again this week and this time try using clementines instead of oranges and using less sugar. I even cut down the sugar compared to some recipes, but I think adding a third bottle of wine (depending on the number of people) or just adding a cup of sugar would be better. It was incredible stuff, perfect for a cold night.

does anyone know the secrets of chinese food? what kind of meat do they use or how do they prepare it? all the local chinese places have the shittiest meat ever and I'm not even sure it's real beef. it's stringy, and very thin and somewhat rubbery usually. any insight on this stuff?
