i love mac and cheese, and that store-bought powder shit cant cut it. i already know how to make the roux, but the past couple batches of homemade cheese sauce ive made have been fairly simple as far as flavor goes - cheddar, gouda, and muenster - so i want to get crazy with cheeses on the next few. i was wondering what /ck/ puts in their homemade mac and cheese, and what 2-4 cheeses would make a delicious combo. i am not afraid of the funky cheeses like gruyere or any of the blues, so dont hold back.
plus, do you guys add anything else? like bacon, broccoli, baked panko topping, etc.

What do you put in your Bloody Mary?
Interested in ideas. I'm currently drinking base of V8 + vodka, with worchestershire, horseradish, cheap hot sauce, dill pickle juice, black pepper, and celery salt. Celery stick to stir, and a couple olives. It's okay but needs something.

Anybody know anything about this place? Its called "Chef Vola". Its in Atlantic City. Its literally the basement of the chef's house. No sign out from, no published phone number, reservation only and I heard that there's a 3 month wait. Ah, and the reservation phone is only turned on for an hour or so per week, which is also known only by word of mouth. Supposedly its the best Italian food in USA, but don't know anyone who has actually been there.
