One of my new year's resolutions this year is to learn how to make as many mixed drinks as possible. Obviously, I dont want to just learn how to make them; I want to fucking make them right (as in proper utensils, cups/glasses, proper good alcohol, etc) I'm kinda on a budget, though, so I'm gonna have to start small and work my way up to more elaborate, ornate drinks as I go along. So I guess, I'll start with one kind of alcohol and work my around the alcohol spectrum. I'd like to start with rum. Why? Why not? I think it's as good a place as any to start. Does /ck/ have an opinion on what rums are best for mixing? I dont know much about rum, but I've seen clear rum, spiced rums, and flavored rums in liquor stores and was wondering what would be best to start with. I'd assume just plain clear rum should be in my arsenal and coconut rum would be a necessity for tropical drinks? Any kind fellows and ladies wanna steer me in the right direction? INB4 look up recipes and shit on the internet. I plan on doing that, but I'd like some practical, real world advice, too

Airbnb guy here. I have an Indian family staying here and I just found out that they are vegetarians. I usually do a big egg breakfast but they dont eat eggs. They do eat dairy(thank fuck) and suggested they would eat pancakes. I usually make mine from scratch but they include egg. What can I sub in?

TL;DR - Cookie Baking Thread Hello /ck/! I'm baking cookies! Here's what I'm doing. Makes 24, "The Chewy" By Alton Brown. Ingredients 8 ounces unsalted butter 12 ounces bread flour 1 teaspoon kosher salt 1 teaspoon baking soda 2 ounces granulated sugar 8 ounces light brown sugar 1 large egg 1 large egg yolk 1 ounce whole milk 1 1/2 teaspoons vanilla extract 12 ounces semisweet chocolate chips Directions Melt the butter in a 2-quart saucepan over low heat. Set aside to cool slightly. Sift together the flour, salt and baking soda onto a paper plate. Pour the butter into your stand mixer's work bowl. Add the sugar and brown sugar and beat with the paddle attachment on medium speed for 2 minutes. Meanwhile, whisk together the whole egg, the egg yolk, milk and vanilla extract in a measuring cup. Reduce the mixer speed and slowly add the egg mixture. Mix until thoroughly combined, about 30 seconds. Using the paper plate as a slide, gradually integrate the dry ingredients, stopping a couple of times to scrape down the sides of the bowl. Once the flour is worked in, drop the speed to "stir" and add the chocolate chips. Chill the dough for 1 hour. Preheat the oven to 375 degrees F and place racks in the top third and bottom third of the oven. Scoop the dough into 1 1/2-ounce portions onto parchment-lined half sheet pans, 6 cookies per sheet. Bake 2 sheets at a time for 15 minutes, rotating the pans halfway through. Remove from the oven, slide the parchment with the cookies onto a cooling rack and wait at least 5 minutes before devouring. Notes The darker the sugar you use, the chewier your cookies will be. I'm using dark brown sugar (I didn't have light brown) and I made a mistake, I added the baking powder to the brown and granulated sugar mix. Also doubled up, I want 48 cookies so I can share. Anyone else have amazing cookie recipes?

My buddy just texted me that he thinks he got food poisoning from some cookies he ate here only 15 min ago. What is the shortest time you can get sick? I have heard the window is from 4 hours to 12 hours, anything longer or shorter and its not food poisoning.

Hey /ck/, I have a surgery coming up in a few months and I need to lose a little weight according to my doctor. I read the /fit/ sticky, calculated my BMR, etc. and my calorie quota per day to achieve my goal by then is about 1380. Can you recommend any meals or foods that could fit in this kind of calorie budget? I've been trying to eat healthier. Last night I had an avocado and cilantro salad with a side of kipper and unsweetened green tea. Unfortunately I ruined it today by chowing down on a thick steak with some steamed corn and a glass of soda. Late night snacking is also my worst enemy. Last night I ate a whole bag of steamed broccoli with a dab of butter by myself. That might not sound as bad as chips but it's still extra calories. I've been trying to drink extra water or tea to calm hunger pangs and cravings, but my appetite is ravenous.
