I am relatively new to nice kitchen knives. I got this from family who came back from Japan and it is fantastic. Stainless 240mm Masamoto Gyuto. I recently got a basic stone to sharpen it and did an alright job but scratched it up a little. What is your knife? Do you prefer Japanese or Western style? Anyone else have a Masamoto? hey coo/ck/s I have some pork shoulder blade and I wanna make some homemade pork curry. I know the general process I am just not accustomed to using spices well. what my idea is was to brown the meat, remove it from pan, bloom whole cumin and mustard seed as well as turmeric and chili powder in a pan, fry up onions, garlic and ginger in that pan and then just mix it all together with some water added and cook down, what steps of the process go first and am I missing any spices?

Well, I finally got the chance to try Costco pizza. Not bad. Not bad at all. Yeah, I could get a better slice in NYC for $2, but this stuff is good on its own merit. Thick layer of real (if somewhat salty) cheese, competent crust and sauce. Better than a slice of Little Caesars or that Marketside stuff from Wal-Mart. If I had a Costco membership I'm sure I'd be getting a whole pizza of this once a month or so.
