hey coo/ck/s I have some pork shoulder blade and I wanna make some homemade pork curry. I know the general process I am just not accustomed to using spices well. what my idea is was to brown the meat, remove it from pan, bloom whole cumin and mustard seed as well as turmeric and chili powder in a pan, fry up onions, garlic and ginger in that pan and then just mix it all together with some water added and cook down, what steps of the process go first and am I missing any spices?
