Hey cooks, just got 250g of lean bite-size pieces of beef heart. How do I cook them so that they are tender (or at least not hard)? In the past, I used to put them on the pan, maybe with a tad of water, let them cook some, pour some olive oil in and maybe something else for taste, let them cook a tad more. But they came kinda hard.

This is what we are having Breakfast is egg, two bacons, or soaked oatmeal, or fruit and an egg Lunch is home made potage bonne femme, poached chicken with sliced mango OR leftovers from the previous night Tonight Dinner: venison and mushroom stuffed cabbage leaves with tomato sauce and dill buttered carrots Tues Dinner: hot smoked salmon, steamed spinach, and baked sweet potatoes. Wens Dinner: roasted tarragon chicken parts with fingerling potaotes and a sauteed vegetable medley of leeks, carrots, zucchini, and sweet red pepper Thurs Dinner: Meatloaf topped with sauteed onions and mushrooms, steamed broccoli, and greek salad with homemade dressing. Friday Dinner: Roasted vegetable and venison burritos made with sprouted wheat tortillas, sour cream, and raw cheese (YUM) and mexican style corn and homemade pinto beans. I haven't decided on the weekend dinner, but by wens I should have something in place. What are you guys going to make this week?

Firehouse Subs Sucks

So a Firehouse Subs opened up near me this week. It's fucking awful stuff. Well, it was decent, not awful. But for nearly $9 for a foot long, it was awful. The dude said the closet thing they have to a reuben sandwich was their NY Steamer, which has corned beef and pastrami, without even telling me they sell just corned beef sandwiches. Why not sell a reuben if you have taken the trouble to offer corned beef? Is it really that hard to add sauerkraut and rye bread? Also, the owner bragged about having fresh cut veggies when I was talking to him but then he didn't even offer to add any veggies to my sub. He just made it w/o asking me about them. So nearly $9 for a foot long sub that just had meat and cheese and a soggy bun. It was a lot narrower than Subway subs so it didn't even fill me up. And it was mostly bread, nothing like the pictures on their website. Please reply and justify liking this place. I'll take Subway any day over them.

Anyone make their ramen in any special way? I throw out the seasoning packet and use a knorr bullion cube, thinly slice celery, add both to the water ad it heats up. Meanwhile, I flash steam collard greens in a skillet, then fry them with a bit of oil, salt and pepper. After the noodles are cooked, add toasted sesame oil, black bean paste, and greens.

Go into work today where im a sous chef. Im leaving next month for bigger things, so i had a tryout today for my replacement. After throwing him bullshit prep so i can see his knife skills i ask him to cook me a medium burger to see if he knows his temps. First one came out rare, and unseasoned. Not wanting to look for a new cook out of lazyness, I give him another shot. Do everything in my power to help him do it correctly, from reminding him to season the second attempt, to showing sweet spots on the grill. While he is cooking the burger, hes using the spatula to squeeze down the burger, releasing its tasty juices. I hold my rage in. Burger is finally done. Bite into it. Perfect medium burger, no flavor. >that feel when you stop caring
