I have tried making falafel a couple of times, and although it tastes lovely, I can't seem to stop the patties from falling apart. This is how I make it: 400g of drained chickpeas (I dab them on kitchen roll to dry them a bit) chopped garlic 1 1/2 tsp on ground cumin flat-leaf parsley 2 tsp ground coriander 1 tsp chilli powder 1 tsp paprika 2 tbsp plain flour 2 tbsp virgin olive oil 1 smallish red onion I very quickly blend it (but so it is still reasonably rough - falafel texture). Any tips /ck/?

I finally obtained a Chicago style deep dish pizza. I can now safely say all the arguing on /ck/ is absolutely unnecessary because the Chicago style destroys New York style without even trying. We never have to have this debate again. Pic related. Italian sausage, kalamata olives, basil, and feta.

Sous vide. I just ordered this immersion circulator and a chamber vacuum. Do any of you anons have experience with this cooking style? My main uses will be for cooking proteins perfectly and consistently, but I'm also curious as to how you might use it for vegetables. Since veggies require much higher heats to break the cell walls, would it be feasible to start the veggies at a higher temp, then lower the water temp to cook the meats while leaving the veggies in the bath?

I'm looking for a proper way to heat natural hookah coals on my stove. My roommate busted one of the cast iron burner grates on our stove, and I'm thinking I need ceramic or something to heat my coals. I don't want to place the coal directly on the burner grate. Any ideas? I don't know what to look for on hookah accessory websites, and in most how-to videos people heat directly on the coil or the stove grate. pic related
