And Meat Just Got a Shit Ton Scarier...

125 more posts in this thread. [Missing image file: 1667875931.jpg]
As if the meat industry wasn't bad enough, the US is now allowing for the first time processed meat from China to be sold, without any oversight. And since processed meat requires no country of origin labels, we won't know if we're eating the Chinese meat or not. Why is Chinese meat scary, you ask? No health regulations, for starters. Just earlier this year they had thousands of dead pigs floating down their rivers, which people were drinking from, and many meat-related disease outbreaks. I think this might just be enough for me to finally go vegetarian. http://www.huffingtonpost.com/2013/09/04/chinese-poultry-processor_n_3866877.html?ir=Business

Professional Cooks

Anyone here a professional cook? Line cooks, prep, etc. I've been cooking in restaurants for the better part of ten years and I was curious if there were any other professional cooks here. I actually have a bachelor's degree, however, since my degree is practically useless I've been grudgingly accepting the fact that I might be a professional cook for life.

Do you guys have any recipes for foods fit for being eaten in a car? Preferably something that can be frozen without turning to bullshit. I'll be driving a cab this winter and I don't want to bloat up on fast foods, and I won't have the time to cook food every day.

I really like pasta and cheeses /ck/ but I realize they aren't so good for me, in high quantities ya'know? So what's the best kind of "healthy" (read: relatively) pastas and cheeses I can buy? Whole wheat? Low fat? What are kinds of things I should look for when buying them. Thank you.

Best quality nonstick pan

Hey. /ck/. I'm pissed. My mother's all upset because her 'Orgreenics' nonstick pan she bought from Wally World just wore out after several months and turned into a food-destroying piece of crap. Mom is old school. Cooking utensils should last most of your adult life, in her mind. Apparently this 'greenie enviro-friendly micro-thin ceramic' bullshit just doesn't cut it. What can I get her to replace it that will last awhile? What do they use in the food industry? Is there any competition out there to heavy-ass seasoned cast iron on the one hand and oh-please-don't scratch-me teflon on the other? Are there any good, DURABLE ceramic/porcelain/adamantium coated frying pans out there? Bonus if you cook for a living in the food industry: What do you guys use that can be used day after day and take a beating? Pic related -- it's what happened to Mom's scorchy breakfast this morning. Price limit hopefully under a hundred, but I'll double that if you convince me it's worth it.

So you drink whiskey for the aftertaste, right? That's the only explanation I can find, it tastes like death when you actually drink it but slowly leaves a delicious aftertaste in your (my) mouth over the next few minutes.

Is there any noticeable difference in the end result when you boil rice as opposed to using the absorption method? I for the life of me can't tell the difference but maybe there's something I'm missing.

Made some blackberry peanut butter cocoa bars today. I used smittenkitchen's "infinitely adaptable" blondie bar recipe as a base; when I realized I'd put cocoa powder in a blondie it made me feel weird inside. They taste great though, that really is a fail proof base.

VERY Expired Beefaroni

Expired Beefaroni on eBay. It's been used by the Aztecs and Aboriginal Australians for centuries. Really a crime that Western cuisine has only recently discovered it. http://www.ebay.com/itm/A-Can-of-VERY-Expired-Beefaroni-/141054817607?&autorefresh=true

So /ck/, what's your favorite dish involving cream? Mine has to be cream spinach, absolutely delicious! >Butter the pan, and put some chopped garlic on the pan 'till they're golden >Turn down the heat and put the minced beef on the pan, the goal is to have it be somewhat tender (though not red, ie the meat should be juicy) >Put aside the cooked beef, and put on the pan frozen chopped spinach, (of course fresh spinach is great as well) >After the spinach's been defrosted, stir it on the pan for a bit more so the water can be drained out - this is to save time >Add the beef and spinach on the pan, add cream >Ad parmesan and gorgonzola if desired, season with plenty of pepper, and some salt >Serve as is or with pasta Thinking of adding some chili next time, for some flavor, (although I am absolutely horrible with spicy food save wasabi) - should I just use chili flakes, or is there something else more suitable for me?

So, I've hit a rather rough patch financially and my food fund is depleted. I'm down to a few cans of food and different sauces, couple things missing other ingredients. I found several cans of yams and I'm wondering if theres any way to make them taste delicious without brown sugar, butter, or anything really. I have plain white sugar and oatmeal? If anyone has anything in mind I can go check my kitchen for ingredients. Any ideas? Oh, and I have canned cranberry sauce (thanksgiving was forever ago holy crap). Pic is not my fridge, we dont even have jelly but it kind of is similar.
