What causes these little boil/blister like bubbles to appear on a bagel after toasting?

Is there a reason why nigiri is so expensive for its size compared to rolls? Is there some expertise vital to cutting it just right or in keeping the fish on the rice? 2-3 dollars for a slice of tuna a bit larger than one's thumb just seems abnormally pricy since the rest of the preparation process seems relatively simple.

Hey /ck/, can you teach me how to make a really good Italian tomato sauce? I want to be able to make a nice sauce for pastas and whatever else, but I don't even know where to begin. I'm willing to cut corners using canned or dried ingredients or whatever, but if it could be made better with fresh/more expensive or inaccessible ingredients, I have no qualms with going the extra mile for it. Thanks

Ask a guy who just miserably failed at baking cookies anything. Usually I'm good at cooking, but rarely bake anything.

>order a cup of steaming, near-boiling coffee or tea >spend the next 10 minutes blowing it and trying to cool it down Why do people do this? Is it a cultural thing, or just something Americans do? Why don't restaurants give people the option of a cup of coffee that isn't scalding? I've heard of some Japanese teahouses that wait until the tea is the 'ideal temperature' before serving. I think that would be fucking awesome.

I'm looking to getting into Asian cuisines so I went out and bought some stuff at a supermarket in chinatown just to have some fun and try new stuff. I got this stuff called "greenmax" that I guess you're supposed to have for breakfast, but I don't really know what it is.. Also, I bought loose green tea (not in individual pouches) and was wondering how that traditional or best way of making it might be. Any recommendations; brands to look out for/shy away from? Reading material would be highly appreciated!

Hey /ck/, I don't come here often but I realize you all are the experts. I recently stopped being a vegetarian and would like to know what I've missed out on these past 6 years I've been one. Any recommendations for what are must haves at chain or fast food places, I'll be trying the locals on my own.

Does /ck/ like jerky? What are your favourite ways to cure/marinade recipes/favourite meats to use? My first batch is drying right now, tasted some of the thinner pieces that are done and I'm happy with it. It's my first real 'cooking' project, I figured it was an easy place to start. What do you guys think of using alcohol in marinades?

I guess I mentioned in the past around the office that I bought steaks marked down at a good price . So a while back the boss is on the phone and he says "Hey you (me), you buy old meat, my wife has a pack of chicken in the fridge and it's got yesterdays date, and she wants to know if she should cook it?" After getting over the shock of knowing I'm thought of as "the guy who buys old meat", I told him she should open it and if it looks good and doesn't smell funky then it should be fine. I think I know now why I haven't been paid better here, a guy who "buys old meat" is probably not expected to need much money. Moral of the story: you can save a lot this way, but keep it to yourself.

Just wanted to share a nice experience with you. So my girlfriend and I broke up a couple of months ago. There were a lot of factors, but I think part of it was birth control fucking up her hormones and killing her sex drive. Anyway, over the past couple of weeks we've been chatting again, we are now working on reconciliation. So tonight we had a date. The plan was for me to go over to her place and cook dinner. The thing is I don't really cook all that much. But I wanted to go strong, so I went with ribeyes and asparagus. To make a long story short, I ended up botching the hollandais for the asparagus, but the steaks came out great, she cooked some paleo chocolate cookies, we fooled around afterward but stopped short of sex because we agreed to take things kinda slow. Now I'm laying in bed with some good food in my guts and a little joy in my heart. Tomorrow I'm gonna wake up in the morning and take a fantastic shit. Feels good man. Any other feel good food experiences out there? Romantic or otherwise?
