I feel like I've been eating too much meat and fatty food lately in general lately. I just don't have that craving for meat any longer. In fact, I don't want it at all right now.

Recommend me some lightweight veggie food that still tastes delicious.

Hardmare mode: It needs to be relatively cheap.
Nightcore mode: It needs to be quick to cook it up.

I personally love a plain fresh green salad. Lettuce, cucumber, red onion or shallot, bell pepper, tomato, olive and feta cheese, with a dressing of olive oil, tarragon, lemon juice, vinegar, pepper and a little salt. Vegetables are at their best when in their natural fresh state, I think.

For warm meals, puree soups are filling, tasty and simple. Select a starchy, filling vegetable as your base, such as potatoes, sweet potatoes, lentils, beans and so on. Then select vegetables that go well with them, such as leek for potatoes. Boil both together in vegetable stock until done, pulse with a stick blender and season. I prefer to finish them with cream, but that will invariably diminish the "healthiness". Finally, garnish, because visually entertaining food is a nice mood lifter. Plain ol' parsley, or a tiny sprinkling of nutmeg will do for pale soups, for darker you could use shavings from a raw carrot or other bright vegetable.

I haven't tried the trick myself, since sweet potatoes are reasonably exotic where I live in, but they say roasting the sweet potatoes before boiling brings out the sweetness better. Might be a hail mary though. Good luck!
