Point & Shoot Cameras... Ye..No?

As someone who is a noob at "serious" photography and on a very limited budget... I was wondering about how good "Point and shoot" cameras are when it comes to HD video recording. I know DSLRs are WAY better, but I can't afford one just yet. Could someone just bring out some differences between the two apart from the cost and "compact" factors? Also, is it possible to use lens filters with a P&S like on DSLRs to create fancy bokehs?

For you guys who develop film on your own, how much more difficult is it to load a plastic reel when it's wet? I picked up a cheap ass plastic tank/reel kit from freestyle photo a few months ago and it's served me great. I've probably done 12 rolls on it so far without any issues til today. I just dev'd 2 rolls on the day before I had a Christmas party so I sort of had to prematurely stop the drying process and I just jammed it all back into the tank and stored it away. I opened it again today and some parts seem a tad bit damp but it didn't seem all that bad. I have a blank roll of kodak gold lying around and that seemed quite easy to load all the way through while both my rolls of tri-x seem to get jammed about 12 inches in. Have to re-trim the end since it seems to get "doggy eared" at the corners as well. [EXIF data available.
