Our Story So Far. . . . .

Mc'Scraft promptly spits out his drink.
"Shit nigga do I LOOK like a babbysitter? Well I do, but it'll have to cost ya to smug. Pay up, chief."
Fortunately, you have just enough cash to convince Mc'Scraft to take you along in his next smuggling plot, however, you keep in mind that after this, it's game over. You'll barely even have enough for to go buy donuts.
Genuinely interested in pokemon

My son my wife and I are all starting to play pokemon together. I had a pretty heated interest in it back in 98 (though I was only 15 or 16 back then) but lost interest shortly after the first movie came out.
However, my son (who is ten) has recently gotten a HUGE interest in pokemon. He wants to play the games, which I said is fine. However, I like to play what he's playing in order to give us things to bond about - and pokemon seems to be a great one. My wife also has shown interest after watching the anime with us (I got us every episode to watch in order).
I have a few questions (and though I'd just make a general thread to discuss too):
1: EV training. I've read about this but don't remember it back in my games. How exactly does someone DO this? How long does it take to get a pokemon to max level with EV training?
2: What "Tier" should we play in? I've already looked at the lists and asked my son if any of his favorites are "uber" and he said no, but he did have some favorites in OU. Is OU fun to play in?
3: What can I expect in the metagame? I've done lots of research already and noted entry hazards seem really popular.
4: HOW THE FUCK do you get wifi to work with a DS? I seriously spent hours trying to get it to work and couldn't figure it out. We have a wireless router in our home and we use it for everything. Our phones, tablets, PS3, laptops, PSPs, you name it - but the DS just WON'T work and I can't figure it out.
5: How important is EV training? If I used a pokemon while doing my in game playthrough and just battled recklessly is there a way to fix that?
6: Is this weird? I intend fully to really get into this and spend multiple hours of my freetime a day on it with my son. If I do this stuff online vs others too would that be weird? How uncommon is it for someone my age to even be playing this? I mean, I'm going to do it even if it is weird because fuck people I'm an awesome dad and I don't care - but is it weird? lol.

Question on trading between C and Y

So I have a copy of Yellow and Crystal. I know that if you trade a pokemon from Crystal back to Yellow holding an item, it obviously won't show up in Yellow, but it will still be there if you trade it back to crystal.
My question is, can I abuse this to evolve pokemon that evolve while holding an item? That is, if in Crystal, my Onix holds a steel coat, and I trade it to Yellow and then back, will it evolve into Steelix?
